South Cumberland Farmer's Market:  No Freezer at the Community Center

Beginning today, there will not be a freezer at the Community Center for the foreseeable future. If you have orders that are left-behind and contain items that would ordinarily go in the freezer, they will be put into the refrigerator.

We strongly suggest not leaving frozen items in the fridge for more than an hour or two beyond the close of market and then only as an extreme emergency.

Contact us if you have any questions:

Thanks!

Martin's Farmstand:  Aug 25

We are starting into the big onion harvest this week. I pulled about 1000 lbs of sweet onions this morning. In the next few days I plan to also do the storage onions. After they are harvested we put them into onion crates so that the air can circulate around them for the curing process. Even after they are cured an onion still wants some air around it for it to store well. Storage temperature for onions is 32F to 80F. If an onion is kept cold for an extended period of time and then is stored warm afterward it will tend to sprout. This is part of the reason that onions sprout so much in the spring as the cellars etc warm up. So it is best to keep onions above 50 if you can not continue to keep them cold. Our market is full of lots of good produce. I hope you can get your share of this good food. Daniel

Princeton Farm Fresh:  The Market is Open

This heat makes me feel like I have moved back to Georgia. What has happened to my seasonably warm Kentucky? As we are drawing down on summer I thought I would post a recipe for Tomatoes and Okra. I have never liked Okra (maybe I have never had “Good” Okra before), but when I made this at the beginning of summer I was an Okra convert. It is so yummy that I am sorry that I snubbed my nose at it before.

The Lady and Sons Okra and Tomatoes

Ingredients

4 slices bacon diced into small pieces
1 small onion peeled and chopped
2 cloves garlic minced
2 (15-ounce) cans diced tomatoes (I used cut up cherry tomatoes)
1 tablespoon chicken base
1 tablespoon sugar
2 cups fresh okra cut into 1-inch pieces (may use frozen, if fresh not available)
Fresh ground black pepper

Directions:
Cook bacon slightly. Saute onion and garlic with bacon until tender. Add tomatoes, chicken base, sugar and pepper. Stir well and let simmer for about 20 minutes. Adjust seasoning if needed. Meanwhile wash okra and remove fuzz if using fresh and cut into pieces. Add the okra and simmer until okra is done, about 20 more minutes (less if using frozen okra.)

See you at the market on Friday!

MARKET NEWS

So many new things are happening at the Market!
We are carrying natural laundry products, jams and are working to bring more items in the coming months! So watch for that!!

I’m reaching out to see if anyone is interested in purchasing Fermented Cod Liver Oil from Green Pastures and Certified Organic Expeller-pressed Coconut Oil from Wilderness Family Naturals? We buy in bulk a few times a year to help everyone save on the cost because it is pricey on small orders, but the health benefits of these products are amazing! Please email or call us if you are interested in placing an order with us!

Look forward to seeing everyone on Tuesday!

My best to all -

Shop often and eat well!
