Fig and Basil Grilled Cheese Sandwiches

Serves: 2 sandwiches
Vegetarian!

Ingredients
4 slices of Bread (original recipe suggests sourdough)
2 tablespoons Butter (softened, plus a bit more)
2 cups Grated semi-hard cheese (such as gruyère)
6 Figs (thinly sliced lengthwise)
6 to 8 Basil leaves
4 teaspoons Honey
1 teaspoon Sesame seeds

Step by Step Instructions
  1. Butter one side of each slice of bread, then top one slice with 1/2 cup of cheese, half of the fig slices, 3 or 4 basil leaves, and another 1/2 cup of cheese, then add another slice of bread. Repeat to build the other sandwich.
  2. Heat a cast iron skillet over medium heat and melt some butter. Cook the sandwiches for 3 or 4 minutes on each side.
  3. Slice both sandwiches and drizzle them with 2 teaspoons of honey and a pinch of sesame seeds.
