Arugula Pesto Pasta

Ingredients
1 pound Dry pasta
5 ounces Arugula (washed) (original recipe suggests baby arugula)
6 cloves Garlic (peeled)
1 cup Toasted pine nuts (divided)
1/2 cup Grated Parmesan cheese (plus extra for serving)
Juice of half a lemon
2/3 cup Olive oil

Step by Step Instructions
  1. Cook the pasta in a pot of salted water according to package instructions for al dente.
  2. While the pasta cooks, pulse the arugula, garlic, 2/3 cup of pine nuts, the Parmesan cheese, and the lemon juice in a food processor until combined. Slowly drizzle the olive oil into the mixture as you pulse it again.
  3. Once the pasta is ready, drain the water and toss the pasta with the pesto and remaining pine nuts.
  4. Serve the pasta immediately, topped with additional Parmesan cheese if desired.
